Rolo cookies

Today I promised Roo we'd start baking so we'd have something to leave out for Santa on Christmas Eve. I've been wanting to try these chocolate cake mix Rolo cookies since last year--a student brought me a plate and I devoured them in 3.2 seconds. They are every bit as delicious as they are easy to make.  And who doesn't love melty caramel in the middle of a gooey chocolate cookie?

Now the trick is going to be making these last until Saturday night.

Rolo Cookies

1 Devil's Food cake mix
2 eggs
1/3 cup oil
sugar for rolling
1/2 package of Rolo candies, unwrapped

Preheat oven to 350 degrees.

1| Mix the cake mix, eggs and oil with a mixer.
2| Drop a golf-ball sized scoop of dough into the sugar bowl.
3| Press a Rolo into the center of the dough ball.
4| Pick up the ball and pinch it closed so the Rolo is hidden inside. Reshape into a ball.
5| Roll the ball in the sugar. Place on a cookie sheet.
6| Bake at 350 degrees for 9 minutes.
